As school started again, I am working at Le Comptoir, to create healthy snacks for kids.
Here is a wheat free version of the well-knowed, well-loved Lemon Poppy Seeds Muffins.


I have worked with Kamut and Millet flours. In this case you need more eggs to ensure the muffins will rise properly.


As I work with rustic flours, the cakes are always darker.

I also have used more poppy seeds as I love it.


I was very happy with the result, the muffins rised, they were not dry and tasty...
