On Wheat

I have published at Le Comptoir an information post about wheat and why I don't use it in the recipes I create. In this post I also explain the difference between wheat and gluten.


I use lots of different flours made from grain (rye, oat, millet, rice), nuts (chestnut) or seeds (hemp). They all have different textures and flavours and they will awake all your senses.
